Lentil Spaghetti Bolognese

Ingredients

  • tick2 cans Chantal Organics Lentils
  • tick2 cans Chantal Organics Tomatoes Chopped
  • tick1 onion, finely chopped
  • tick3 garlic cloves, peeled and chopped
  • tick6-8 button mushrooms, thinly sliced
  • tick1/2-1 tsp chilli flakes
  • tick1 tsp Chantal Organics Coconut Oil
  • tickSalt and pepper to taste
  • tick1 packet gluten free spaghetti

instructions

  • Step 1.

    Melt the coconut oil a large fry pan over medium heat, add onions and garlic and saute for 3-5 minute until clear.

  • Step 2.

    Add the lentil, tomatoes, mushrooms, chilli flakes, salt and pepper to the pan. Put the heat down slightly and simmer for 5-10 minutes.

  • Step 3.

    Rinse the pasta and cook as per instructions.

  • Step 4.

    Once pasta and bolognese are done, serve the bolognese over the spaghetti and garnish with fresh parsley.
