Speedy Bolognese chilli is a budget friendly recipe that’s suitable for the whole family. Inspired by chilli con carne, this mixed bean, garlic, and corn mix features Bolognese pasta sauce for a tasty twist. Topped with sour cream, cheese, chilli, and coriander.
- Chantal Organics Extra Virgin Olive Oil
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 cans Chantal Organics Mixed Beans
- 2 cups corn kernels
- 1 jar (660g) Chantal Organics Bolognese Pasta Sauce
- To serve (optional)
- Sour cream
- Grated cheese
- Sliced chilli or chilli flakes
- Fresh coriander leaves
- Cooked quinoa
- Steamed rice
- Tortilla chips
Heat a large pot to medium-high heat. Drizzle with extra virgin olive oil and sauté the onion and garlic for 3-5 minutes or until softened.
Add mixed beans, corn kernels and bolognese pasta sauce. Stir to combine and season with salt and pepper.
Cook for 5-10 minutes or until heated through.
Serve topped with sour cream, cheese, chilli, and coriander.
Bolognese chilli is delicious when served over cooked quinoa tossed with steamed rice, and a side of crunchy tortilla chips.
Simply replace sour cream and cheese with your favourite plant-based alternatives for a vegan meal.
