Quick Bean Chilli using Bolognese Sauce
A quick, budget-friendly chilli made from pantry staples and packed with plant-based protein. This hearty mix of beans, garlic and corn gets a flavour boost from a jar of Bolognese sauce – an easy, versatile twist on a classic.
Ingredients
Chantal Organics Extra Virgin Olive Oil
1 onion, diced
2 cloves garlic, crushed
2 cans Chantal Organics Mixed Beans
2 cups Chantal Organics Whole Kernel Corn
1 jar (660g) Chantal Organics Bolognese Pasta Sauce
- To serve (optional)
Sour cream
Grated cheese
Sliced chilli or chilli flakes
Fresh coriander leaves
Steamed rice
Tortilla chips

Step 1.
Heat a large pot to medium-high heat. Drizzle with extra virgin olive oil and sauté the onion and garlic for 3-5 minutes or until softened.

Step 2.
Add mixed beans, corn kernels and bolognese pasta sauce. Stir to combine and season with salt and pepper.

Step 3.
Cook for 5-10 minutes or until heated through.

Step 4.
Serve topped with sour cream, cheese, chilli, and coriander.
