Zesty Homemade Chili Mayo
This creamy chili mayo is smooth, rich, and lightly spicy, balanced with lemon and mustard. Quick to make and easy to adjust for heat, it’s great on sandwiches or burgers, as a dip for hot chips, and alongside grilled meats.
Ingredients
1 egg
1 cup Chantal Organics Extra Virgin Olive Oil
1 tsp Dijon mustard
1 tbsp Liquid Chilli
A squeeze of lemon juice
Salt and pepper to taste

Step 1.
Place the egg, olive oil, mustard, lemon juice, and Liquid Chili into a tall, narrow bowl or jug. Insert the stick blender and rest it on the bottom. Blend without moving for a few seconds, then slowly lift the blender up through the mixture until it emulsifies and thickens into mayonnaise.

Step 2.
Season with salt and pepper to taste. Add an extra dash of Liquid Chili if you prefer more heat and gently blend again to combine.

Enjoy with hot chips, spread on a burger or wrap, drizzle on tacos or include in sushi.
