Coconut Banana Bread

Ingredients

  • tick2 cups Chantal Organics Desiccated Coconut
  • tick3 ripe bananas, mashed
  • tick1 cup Chantal Organics Brown Rice Flour
  • tick1 tsp baking powder
  • tick4 eggs
  • tickPinch sea salt
  • tick1/2 cup Chantal Organics Coconut Oil
  • tick1/3 cup Chantal Organics Brown Rice Syrup

instructions

  • Step 1.

    Heat oven to 180 degrees celsius.

  • Step 2.

    Add mashed banana, desiccated coconut, brown rice flour, baking powder, salt and eggs to a bowl and mix together.

  • Step 3.

    Melt coconut oil and brown rice syrup over low heat until coconut oil is melted. Pour this into the banana mixture and mix together gently until just combined.

  • Step 4.

    Pour into lined loaf tin and cake for 50-55 minutes, until a skewer comes out clean. Wait for it to cool down slightly (20 minutes), slice and enjoy while it’s still warm!

  • Serving suggestion

    ​Enjoy with a cup of herbal tea as a snack or even for breakfast toasted and topped with tahini, coconut yoghurt or alongside a protein smoothie.
