Rustic Potato & Herb Pizza
A simple yet satisfying pizza topped with a creamy white spread infused with garlic and basil – perfect for an easy, satisfying dinner. It’s finished with thinly sliced potato and courgette for a beautifully presented pizza.
Ingredients
1 pre-made pizza base
4 potatoes
1 courgette
1/2 onion
125 g mascarpone
20 g shredded parmesan
100g shredded mozzarella
1 tbsp Liquid Garlic
1 tbsp Liquid Basil
Salt & pepper

Step 1.
Pre heat the oven to 200 C.

Step 2.
In a small bowl, mix the mascarpone, parmesan, Liquid Garlic and Liquid Basil until combined. Spread over the pizza base.

Step 3.
Cut the potatoes and half of the courgette into thin slices and lie them in a circle around the pizza base. Add shredded mozzarella on top.

Step 4.
Bake the pizza for 8-10 minutes, until it turns golden. Top with freshly grated parmesan.
