Plant-based Tenders & Pineapple Avocado Salsa Taco

  • tick1 box plant-based tenders (we love Let’s Eat)
  • tick1/2 tropical gold pineapple, finely diced (we love Dole)
  • tick2 ripe avocados, diced (we love we love NZ Avocado)
  • tick1 can Chantal Organics Black Beans, drained and rinsed
  • tick½ cup chopped coriander (we love Superb Herb)
  • tick1 small red onion, finely diced
  • tick2 limes, juice only
  • tick1/2 tsp ground cumin
  • tick1 fresh red chilli, deseeded & chopped (optional)
  • tickSalt & pepper
  • tick4 large or 8 small flour or corn Tortillas
  • tickExtra lime
  • tickExtra coriander
  • tickTaco sauce (optional)


  • Step 1.

    Cook the tenders according to the packet instructions.

  • Step 2.

    Mix all ingredients of salsa. Set aside.

  • Step 3.

    Serve tenders with the salsa on heated tortilla and extra lime wedges and hot taco sauce if desired.
