Chicken, Kale, Lentil and Black Bean Soup
A hearty soup perfect for winter with lentils, black beans, potato, kale, shredded chicken and parsley.
Ingredients
- Chantal Organics Extra Virgin Olive Oil
- 1 onion, diced
- 2 carrots, diced
- 2 garlic cloves, crushed
- 2 tsp ground cumin
- 3 potatoes, diced
- 2 rosemary sprigs
- 1 can Chantal Organics Black Beans, drained
- 1 can Chantal Organics Lentils, drained
- 1.25 Litres chicken stock
- 2 cups shredded chicken
- 2 cups chopped kale
- To serve:
- Fresh parsley, roughly chopped

Step 1.
Heat extra virgin olive oil in a large pot over medium heat. Sauté onion and carrots until softened.

Stir through garlic and cumin and cook until fragrant.

Step 3.
Add potatoes, rosemary, black beans, lentils and chicken stock. Season with salt and pepper and bring to a boil.

Step 4.
Once boiling, reduce to a simmer and cook for 20 minutes.

Step 5.
Add chicken and kale and cook for a further 5 minutes or until potatoes are tender.

Step 6.
Garnish with parsley to serve.
