Chicken, Kale, Lentil and Black Bean Soup

  • Step 1.

    Heat extra virgin olive oil in a large pot over medium heat. Sauté onion and carrots until softened.

  • Step 2.

    Stir through garlic and cumin and cook until fragrant.

  • Step 3.

    Add potatoes, rosemary, black beans, lentils and chicken stock. Season with salt and pepper and bring to a boil.

  • Step 4.

    Once boiling, reduce to a simmer and cook for 20 minutes.

  • Step 5.

    Add chicken and kale and cook for a further 5 minutes or until potatoes are tender.

  • Step 6.

    Garnish with parsley to serve.
