  • Step 1.

    Place the egg, olive oil, mustard, lemon juice, and Liquid Chili into a tall, narrow bowl or jug. Insert the stick blender and rest it on the bottom. Blend without moving for a few seconds, then slowly lift the blender up through the mixture until it emulsifies and thickens into mayonnaise.

  • Step 2.

    Season with salt and pepper to taste. Add an extra dash of Liquid Chili if you prefer more heat and gently blend again to combine.

  • Serve Suggestions

    Enjoy with hot chips, spread on a burger or wrap, drizzle on tacos or include in sushi.
