Easy
Peanut Butter and Jelly Energy Balls
Tasty energy balls packed with mixed seeds and nuts, sweetened with dates and combined with crunchy peanut butter, dried strawberries, rolled oats and coconut. What a great snack on the go!
Ingredients
- ¼ cup pitted dates
- 2 tbsp whole almonds
- 2 tbsp walnuts
- 1 ½ tbsp pumpkin seeds
- 1 tbsp ground flaxseed or 2 tsp flaxseeds
- 1 cup Chantal Organics Old Fashioned Rolled Oats
- ⅓ cup Chantal Organics Crunchy Peanut Butter
- ¼ cup dried strawberries
- 2 tbsp Chantal Organics Desiccated Coconut
- 2 tbsp Chantal Organics Hemp Seeds
- 1 ½ tbsp sesame seeds
- 1 ½ tbsp Chantal Organics Virgin Coconut Oil

Step 1.
Place the dates, almonds, walnuts, pumpkin seeds and flaxseeds in a food processor and blend until well combined.

Step 2.
Add the remaining ingredients and pulse until combined into a sticky mixture.

Step 3.
Taking one tablespoon at a time, roll the mixture into balls.

Step 4.
Store in the fridge for up to a week.

NOTE
Dried cranberries can also be used instead of or as well as the dried strawberries. If using both, use 2 tbsp of each.
