Roasted Okra, Bacon and Mixed Beans
Tender roasted okra coated in garlic, paprika and cumin, tossed with crispy bacon and mixed beans. Finished with a squeeze of fresh lemon and parsley.
Ingredients
- 300g okra
- 2 Tbsp Chantal Organics Virgin Coconut Oil, melted
- 1 tsp garlic powder
- ½ tsp ground paprika
- ½ tsp ground cumin
- 1 can Chantal Organics Mixed Beans, drained
- 250g bacon rashers, diced
- To serve
- Lemon wedges
- Fresh parsley, roughly chopped

Step 1.
Preheat the oven to 200°C fan bake and line a large baking tray with baking paper.

Step 2.
Cut the okra in half lengthwise and place on the prepared baking tray.

Step 3.
Drizzle over coconut oil and add garlic powder, paprika and cumin. Toss to combine and bake for 5 minutes.

Step 4.
Carefully remove the tray from the oven, add mixed beans and bacon. Season with salt and pepper, mix to combine and bake for a further 10 minutes or until the okra is tender and bacon is crispy.

Step 5.
Garnish with a squeeze of lemon and parsley to serve.

Serving Suggestion:
Serve on a baked potato or toasted bread.
