Easy Pesto-Glazed Salmon with Couscous
This easy, yet healthy meal comes together in less than 30 minutes. Try using Chantal Organics Moroccan Style Couscous & Veg Easy Bowl for an extra boost of deliciousness!

Ingredients
2 Tbsp Chantal Organics Chilli & Garlic Pesto
600 g salmon fillets, divided into equal portions
1 cup couscous or 2 Chantal Organics Moroccan Style Easy Bowls
1 handful fresh parsley, chopped
½ cucumber, diced
¼ cup Chantal Organics Turmeric Tamari Roasted Almonds
1 handful chives, finely chopped
1 lime, cut into quarters
100 g rocket

Step 1.
Preheat the oven to 200°C. Place the salmon in a single layer in a baking dish. Spread the pesto over the salmon and bake for 12–15 minutes.

Step 2.
Prepare the couscous according to package instructions and then fluff with a fork. The Moroccan Style Couscous & Veg Easy Bowl offers a simple option with an extra boost of flavour. Stir the parsley, cucumber and almonds into either couscous option. Season with salt and pepper.

Step 3.
Divide the couscous onto 4 plates. Place a piece of salmon on the couscous, sprinkle with chives, tuck in a lime wedge for squeezing and serve with rocket alongside. Drizzle with more pesto to suit your tastebuds.
