Quick & Easy Chicken Fried Rice

Ingredients

  • tick2 Tbsp canola oil
  • tick1 red onion, diced
  • tick1 zucchini, diced
  • tick2 cloves of garlic, crushed
  • tick1 carrot, grated
  • tick1 cup shelled edamame beans, thawed
  • tick½ cup frozen corn kernels
  • tick3 spring onions, sliced
  • tick2 × 250g microwave jasmine rice
  • tick2 eggs, lightly beaten
  • tick3 Tbsp Chantal Organics Tamari Soy Sauce
  • tick1 Tbsp fish sauce
  • tick2 tsp Chantal Organics Toasted Sesame Oil
  • tick½ tsp ground white pepper
  • tick½ rotisserie chicken (without stuffing), shredded
  • tick ¼ cup roasted cashew nuts

instructions

  • Step 1.

    Heat the oil in a large pan or wok over medium-high heat. Add the onion, zucchini, carrot and garlic and stir fry for 2 minutes. Add the edamame, corn and spring onions, cooking for another minute.

  • Step 2.

    Push the vegetables to the side of the pan and add the rice. Toss to combine and then evenly pour over the egg. Allow to sit for a few minutes and then toss again.

  • Step 3.

    Pour over the soy sauce, sesame oil and pepper. Stir-fry everything together for 2–3 minutes.

  • Step 4.

    Stir in the cooked chicken and cashew nuts, cooking for another few minutes until hot.

  • Step 5.

    Serve in shallow bowls.
