Fried sweet plantains

Ingredients

  • tick2 ripe plantains (yellow)
  • tick2 tbsp butter
  • tick1 tbsp honey
  • tick¼ tsp ground cinnamon
  • Serve with
  • tickBanana & peanut butter icecream (recipe here)
  • tickA handful blanched peanuts, toasted and crushed

instructions

  • Step 1.

    Peel and slice the plantains 2cm thick at an angle.

  • Step 2.

    Heat a pan over medium heat. Melt butter, then cook plantain slices 2 minutes each side, until the pieces turn golden.

  • Step 3.

    Drizzle with honey and sprinkle with cinnamon. Lower heat and continue to cook for 7–8 minutes until caramelised.

  • Step 4.

    Serve with ice cream, topped with peanuts. Delicious.
