Mixed Bean Greek Salad
Change up your regular weekday salad by adding mixed beans and a ton of delicious summer produce. Cucumber, cherry tomatoes, capsicum, red onion, olives and feta with a lemon dijon dressing and fresh dill make this salad worthwhile.
Ingredients
- Dressing
- ⅓ cup Chantal Organics Extra Virgin Olive Oil
- Zest and juice of 1 lemon
- 2 cloves garlic, crushed
- 1 tbsp Chantal Organics Apple Syrup
- 1 tsp dijon mustard
- Salt and pepper to taste
- Salad
- 2 cans Chantal Organics Mixed Beans, rinsed and drained
- 1 cucumber, sliced
- 2 capsicums, cut into chunks
- 300g cherry tomatoes, halved
- ½ red onion, sliced
- ½ cup mixed olives, halved
- 200g feta cheese
- Large handful of dill, chopped

Step 1.
To make the dressing, whisk together all the dressing ingredients until well combined.

Step 2.
To make the salad, toss the Mixed Beans, cucumber, capsicum, cherry tomatoes, red onion, olives and dressing together in a large bowl.

Step 3.
Transfer the salad to a serving plate or platter, then garnish with feta cheese crumbled over the top and dill.

Note
Add more greens to your salad with some extra lettuce or rocket on your plate or platter before topping with the dressed mixed bean salad.
