Lamb & Moroccan Style Couscous
Make your weeknight meals easier with our Easy Bowl Dinner Series. This one features the Moroccan Style Couscous & Veg Easy Bowl as the base for a luscious lamb chop, with some fresh greens and a dollop of Grilled Pepper Pesto.

Ingredients
1 Chantal Organics Moroccan Style Couscous & Veg Easy Bowl
100ml boiling water
2 - 3 lamb loin chops
1 tbsp Chantal Organics Extra Virgin Olive Oil, for frying
1 tbsp Chantal Organics Grilled Pepper Pesto
Handful of rocket or spinach leaves
Salt and pepper

Step 1.
Prepare the Moroccan Style Couscous & Veg Easy Bowl according to package instructions.

Step 2
Heat oil in a frying pan on high heat and sear the lamb for 2 minutes on each side, or until cooked to your preference. Remove from the pan and let it rest for 5 minutes.

Step 3.
Serve the lamb over the couscous, with a side of dressed rocket leaves and a dollop of Chantal Organics Grilled Pepper Pesto.

Tip
Swap the lamb for another meat or use chickpeas for a vegetarian option.
