Fresh ginger is different than dried ginger, in both texture and intensity, but can be substituted using a 1-to-3 ratio. Approximately 1 teaspoon of dried ginger is equal to 3 teaspoons of fresh ginger. Use a spoon to peel off the skin, then grate or thinly slice and add it to soups, dressings, marinades, noodle dishes, curries or even smoothies.
