Vegan Plum Galette

​A delightful treat that makes the most of fresh summer stone fruit from the lovely Tereza Poljanic.



  • 2 cups Chantal white flour stoneground
  • ½ cup Chantal coconut oil
  • A pinch of Chantal fine sea salt
  • 1 tbsp Chantal golden sugar
  • 1/3 cup cold water
  • 1 tsp Chantal apple cider vinegar

Plum filling

  • 2 cups plums (peaches or nectarines work well too)
  • ¼ cup Chantal brown rice syrup
  • 2 tbsp Chantal arrowroot powder
  • 1 tsp vanilla essence
  • A pinch of Chantal fine sea salt
  • 1 tbsp lemon juice


​1. In a food processor mix the flour, salt and sugar.

2. Add coconut oil and ¼ cup of water. Blend. Add the rest of the water if necessary. When the dough sticks together, wrap in cling film and leave in the fridge for 2 hours.

3. Meanwhile make the filling. Chop the plums and mix them with syrup, arrowroot, salt, vanilla and lemon juice. Leave aside.

4. When the dough is ready, take it out of the fridge and start rolling it out. I’ve shaped them into 12 cm circles (it’s easier to work with smaller ones).

5. In each drop a spoonful of the plum filling. Make little edges on each galette.

6. Bake at 205 degrees Celsius for 18 minutes.

Serving Suggestions

Serve warm with coconut yogurt or ice cream.
