Smashed Avo with Purple Cauliflower & Potatoes

A simple, vegetable rich recipe, ideal for a quick and easy lunch. We love this recipe from whole foodie Tereza Poljanic.


  • 2 avocados
  • 1 tbsp Chantal Organics Kale Powder
  • 2 tbsp fresh basil
  • 3 tbsp Chantal Organics Olive Oil
  • 2 tbsp lemon juice
  • 1 tsp mustard
  • 1 purple cauliflower (regular cauliflower is fine too)
  • 4 purple potatoes (regular potatoes are fine too)


‚Äč1. Chop the cauliflower and purple potatoes.

2. Place onto a baking tray, add olive oil, salt, pepper and bake at 220 degrees Celsius for 20 minutes.

3. Meanwhile make the smashed avocado. Open two ripe avocados and scoop out into a food processor with the rest of the ingredients. Blend till smooth.

4. Serve with baked cauliflower, potatoes and fresh salad greens.
