Fresh Summer Quinoa Salad

Recipe Intro: This light, refreshing salad is perfect for a warm, summer meal. We love the combination Tereza from Teresamisu creates with fresh strawberries, greens and feta – a sensational burst of flavour!


Ingredients

  • 100g Chantal quinoa
  • 2 courgette
  • 1 punnet strawberries
  • 50g goat feta cheese
  • 100g seasonal greens: I used a mix of kale, beetroot leaves and salad leaves
  • 20g Chantal pumpkin seeds
  • handful of fresh basil and parsley
  • 1 spring onion

Dressing

  • 2 Tbsp Chantal whole tahini
  • 4 Tbsp olive oil
  • 4 Tbsp lemon juice
  • pinch salt and pepper
  • 1/2 Tbsp Chantal rice syrup
  • 1 garlic clove

Method

1. Cook the quinoa according to the packet. Set aside in a medium bowl.

2. Wash and chop greens, spring onion, strawberries, basil and parsley. Set aside.

3. Toast the pumpkin seeds in a dry pan until brown and set aside.

4. Meanwhile, chop the courgette lengthwise, pan fry with olive oil until fragrant and slightly brown. Add to the bowl with the cooked quinoa, along with the other chopped greens and berries.

5. To make the dressing, blend all the ingredients until smooth.

6. Pour the dressing over the salad and mix with hands.

7. Top with goat feta and pumpkin seeds.
