Chocolate Orange Energy Bars

​Having small bites on hand to bridge the gap between meals is never a bad idea, especially for wee ones at school, or those of us at desk jobs. That said, tt seems many ‘healthy’ and ready to eat snacks are often laden with refined sugar, artificial colours and preservatives, which aren’t so great for our health. Here’s a delicious yet nourishing energy bar recipe, that’s easy to put together, and ideal for curbing those afternoon sugar cravings.


Ingredients

  • ​2 ½ cups Chantal jumbo rolled oats
  • ½ cup of Chantal pumpkin or sunflower seeds (or a mix of both)
  • ¾ cup of Chantal Almond butter
  • ½ cup of Chantal brown rice syrup
  • ½ cup Chantal dried figs or apricots
  • 1 tsp Chantal cinnamon powder
  • Rind from one orange
  • 3 tbsp cacao powder
  • ½ tsp Chantal fine sea salt
  • 50 grams of dark chocolate (70% or more)
  • 1 tbsp water

Topping

  • 50 grams of dark chocolate (70% or more)
  • Handful of dessicated coconut
  • Handful of goji berries

Method

​1. Place the rolled oats in a pan and gently toast for 5 minutes or until slightly golden. Transfer them to a large baking bowl to cool once they’re done.

2. Add the seeds to a pan, and lightly cook for 2-3 minutes or until golden. Transfer to the same bowl as the oats to cool.

3. In a separate bowl add the nut butter, brown rice malt syrup, cacao powder, water and mix well. Place to one side.

4. Combine both bowls together and mix well until everything is combined. You might need to get your hands in to mix it well and ensure everything is covered.

5. Pour the mixture into a lined baking tray and smooth and press down firmly before setting in the fridge for one hour. Once its set you can pull it out and chop it into bars.

6. Finish off with a drizzle of melted dark chocolate and some goji berries or desiccated coconut on top. Store in the fridge in an airtight container for one week.
